Rub or no rub?

One of my favorites. We got some Chipotle garlic dry rub that's the best I've had yet.
It was. The brown sugar based rub makes a delicious bark.
Hijacked!!..
We kinda did didn't we. Hey that looks good too.
I do this with wings sometimes. Mix a little cayenne with sorghum and grape jelly.
Well it turned out aight I guess. Definitely back to the rubs next time.
This is why I love bbq. So many different options to try: brine, inject, rub, sauces, mop sauces, type of wood, temp, wrapping etc. the possibilities are endless and it is a blast every time.
May as well hijack it a little more...
Started with a small deer backstrap
Then cut it into 3/4" chunks and kinda butterflied it open some. Wrapped the meat around some onion and then wrapped some bacon around the meat and used a few steel skewers instead of using toothpick.
They got gone before I could get a picture of the finished product.
