Anybody have a good pickled egg recipe?

Yeah I found some different ones but like you said not as good as Penrose.

They stopped making them apparently due to a fire at the factory that produced them. This is all the Penrose products they offer now

ground cayenne pepper
black pepper
salt
red pepper flakes
minced garlic
straight white vinegar
1/2 bottle hot sauce

a LOT of the above. Heat adjusted with the ground red pepper. About a week to be right and better if longer. Never measured just used a lot

Dozen peeled boiled eggs in a jar, can of sliced beets juice and all, cup of vinegar, 1/2 cup sugar, fill jar to top with water, sit overnite or longer in fridge, then eat

I've always avoided the eggs with beet juice. It was one of those things that I had to eat as a kid and just hated it. I haven't had a beet in half a century until I made these.
Turns out I don't hate beets after all. I had what I couldn't fit in the jar with my lunch and it was pretty dang good.
I think it was just that I was forced to eat them that made it so unappealing.
Still detest broccoli and cauliflower though.

Eggs are done and fixings in stock..I/2 gallon mason jar waiting until this weekend..I'll take the fish out to thaw tomorrow. Eggs will be in the mason jar and fish taco's will be served..

I was literally just thinking about that very thing.
Wondering if the pickling would wash out the smoke flavor?

I know nothing about pickled eggs, but can tell you a Scotch egg will change your culinary life…

Extremely easy. Super decadent. Must try at least once, but I guarantee it won't be a one and done!
