I used to just buy them from the store but prices have gotten ridiculous so I've started making my own.
I've tried several recipes I've gotten online but I can't find the one that makes me happy.

Find a nice big jar and fill it w/ peeled boiled eggs (pierce them w/ a fork) and 5 sliced hot cherry peppers and a few Tuscan peppers. Squeeze them a bit and let the juice go in the jar.
Add White vinegar & water 50/50. (1/2 & 1/2)
Tsp of Tabasco
1/2 Tsp Kosher Salt
1/2 Tsp of Pickling Spices
It'll take a month or better in a fridge. The harder the eggs get the more flavor you'll have.
Adjust the amounts by how spicy you like them.

I know nothing about pickled eggs, but can tell you a Scotch egg will change your culinary life…
I love Scotch eggs. Reggie's in Atl used to make some great ones and Maguire's in Senoia makes some good ones.

Dozen peeled boiled eggs in a jar, can of sliced beets juice and all, cup of vinegar, 1/2 cup sugar, fill jar to top with water, sit overnite or longer in fridge, then eat :thumb:

**sometimes I will re-use the juice one more time
Going to do these tomorrow.
Did Cajun alligator eggs today.
