Which 1911 would you choose?

Sig ,great 1911 straight outta the box

Newer kimberz finish falls off and they use plastic main spring housings

I would pick the Ruger 1911. Everything you want in a 1911.
All Stainless Steel, no Plastic (like Kimbers)
Series 70 action
Flat backstrap
Commander hammer
Extended beavertail.
etc...
