It's flank steak. Pounded flat. Seasoned with crushed black pepper. Fresh mozzarella cheese. Sautéed red onions, green peppers, portobello mushrooms. Sautéed with butter, pepper, red wine vinaigrette. Placed in the center of the meat.. Rolled up. Cooked on low heat for about 20 mins. I'm telling you.. It's epic.

I can't afford a big green egg, just a COS. It's been going for 23 hours now with two fat butts in it. Was up till 5 fighting sub freezing weather trying to keep it going.

theres quite a few DIY green eggs online, I use a Weber and have great results but this might be worth a try...
