Both are delicious. My new favorites.

I think I could come up a facsimile for cabeza by using souse meat. Need to have some idea on preparing the tongue though.

Lengua with a jerk seasoning 200-225* on the BGE bout 1.5 hr, slice thin and then mix it up in a hot ass cast iron skillet with onions and green and red bell peppers, roll it up in a flour tortilla with cheese, sour cream, salsa....

I think I'd try headcheese first. Souse meat would be a poor substitute since it has vinegar in it.

Had headcheese too! Don't know which is worse! Lol

I grew up a poor Irish and it was meatloaf and potatoes or corned beef and potatoes.
