Smoking fish

Never smoked Stripper but I've smoked Salmon and Grouper. Salmon is by far my favorite smoked. Go with low heat around 200. The length of time will depend on how well you like your fish cooked and intensity of smoke flavor you desire. You can always finish in the oven, but I would say minimum 45 mins on smoker.

One of my favorite glazes for Salmon is:
1 cup maple syrup
1/3 cup soy sauce
Red Pepper (if you want the spice)
