What do you about beans going rancid in storage?

What do you about beans going rancid in storage?
We have eaten beans that have been in storage over 5 years. No issues at all.
Use mylar bags and oxygen absorbers. Get a food storage system. A vacume sealer is the tops. We use a combo of a few different types.I struggle with this. Not sure how to store their food without it going bad. I'm afraid moisture might get into the bag over a period of extended storage.
I'm saving two 45cal bullets.Don't want to live in a totally **** up world.I don't know why, but I have kind of been going overtime on stocking on store able foods. And other needed supplies.
Anyone else doing more then normal?
