I have recently acquired one, I have always heard that they roll over easy, do you recommend putting a 1 inch spacer on them or buying different rims with a different offset to help with the issue? Completely new to them.

Just slow down and don't get wild. I've had 3, never rolled one but didn't get crazy in them either. The drum brakes are a big weakness in those things.
 
I had a stock 80 cj5 with no lift and 31 inch tires. Beat it to death , never flipped it,
I always bought with enough to tires to flush with the flares.

that was 33 years ago and 14 jeeps later

mine had discs on the front ,drums on back
 
It's a risk, but just know what you have and how to drive it safely. Sharp turns @ high speed are best avoided. I had a Bronco II for over 10 years as a daily driver and they had the same bad reputation.
