What would you do?

Bought a 15 pound bone out ribeye today on a whim. Don't know what I want to do with it. I'm thinking cutting 6-7 pounds off to smoke and then cutting the rest into steaks. What would you do with it?
Invite everyone, well not THOSE a guys… and have a great time.

Ribeye is a prime (!) cut for steaks. Smoking it, while delicious, seems wasteful. Vacuum pack and freeze what you don't use now for steaks later.

Cut it all into steaks slightly over 1" thick. Cook in oven at 200° till internal temp reaches 90°. Quick sear on both sides on cast iron pan. This is the way.

This is a good option. Or add a bit of time in the pan and skip the oven. Either way, melt some butter and add minced garlic and rosemary before searing your steak.
Anything over rare is doing it wrong.

I did that last year and wasnt really impressed. The next one I just cut it all into steaks. Much more enjoyable that way.
