Looks great— I always heard you suppose to leave head attached,so while it’s cooking it releases a oil into the meat.i know nothing about trout,is that a old wise tail or they any truth to it.
i used to cut the heads off and was questioned by it one time. since then i leave them on. easier to clean and a pinch more meat to gnaw off the bone.

I’d have to pop them eyes out lol ,ain’t no fish gonna be staring at me at the dinner table.
 
Just always cut the heads off. It was the way daddy and momma taught me when I was a kid. Only reason I guess was that momma didn’t like them looking back at her while she cooked them. Lol lol.
