I remember as a young pup visiting a local farm that used a mule powered press to squeeze the juice from the cane then they boiled the juice down into syrup in open kettles. It was some of the best syrup I ever tasted

The stuff they call cane syrup in the local grocery store is mostly corn syrup and sugar water
