Smoking the Andouille....

That will be delicious. When I worked in the meat dept. and then guy would pull his huge smoker out from and sell smoked meats out if for whatever occasion. Well Boots was the over the meat dept. And he would take a couple packs of those red sausages the hot ones I think they are call Red Hots but I am not sure of the name exactly. Anyway after a couple hours on that smoker he would bring them back to the meat dept. and we wouldn't chow down. If you haven't already give those a shot next time. Just through a pack or two in. Man they would be so good it would make you want to slap your mama for not making them for you before that. The smoke and heat really does bring them to a whole nother level.
