Have a couple of rainbow trout filets in the smoker now. Start them at 225 for @20 minutes then drop temp to @185 for 1 hour or until they feel done.

Thru on a half rack of ribs for my lady and myself bout 40 mins ago. I bumped the heat to 300 for this burn so they will be ready bout 5:30- 6:00.
Six ribs work out just about right for the two of us with the other fixins. I'll grill some asparagus while the ribs are resting and heat up some baked beans and we'll call it good...
