I bought another. I’m serving about 18 folks Thursday and don’t want to roll the dice. I’m gonna cook the first one later.

Definitely the safe way to go, but you can always cook it so that any bacteria is dead. Or freeze it after cooking and reheat. Does the same thing.

It was great! Good flavor, tender and juicy. I cooked it on my pellet grill at 275 for 4 hrs basting every 30 minutes.
