Big Green Egg

4 large bone-in, skin-on chicken breasts
Rinse and pat dry, then rub with olive oil
Use a lemon pepper or your favorite Cajun dry rub and hand rub both sides
Place in disposable foil pan, pour in equal parts vinegar and water then shot of Dale's to cover pan 1" deep

Use lots of good wood charcoal and get fire to 375 to 400
Soak wood chips for 20 min...apple or pecan...add to fire just before meat

Cook skin side down over direct or indirect heat....5 to 15 min till skin is browning
Turn and cook rest of time with skin up.
I baste a few times with the vinegar/dales.
If I don't have the pizza heat deflector I put the aluminum pan on the grill and the breast in a v-rack in the pan after cooking on direct heat for 15 min on each side .

Usually takes 45min to 1 hr, depending on temp of your fire and size of breast.

Drink 2 to 3 beers while cooking....feel free to put a little in pan/basting sauce.
Add favorite BBQ sauce to meat 5 minutes before taking off grill.
Let it cool/sit for 15 minutes....it will melt in your mouth.

4 large breasts will feed six.
