I'm starting to get a hang of my smoker. This is my first attempt at Ribs. I also made smoked cajun Vidalia onions. Sides were coleslaw, and real baked beans. Homemade chocolate pie for dessert.

Thanks. Peel onion. Slice half way through in two directions square. Push soft butter as far down from the top as possible with out separating onion, put extra butter on top. Sprinkle with Cajun seasoning over entire onion. Make a aluminum foil bowl leaving the top open. Smoke at 225 for 2 hours or until onion is as soft as you would like. Eat it up.
