I’ve done turkey like that, should have already tried pork. A half loin should be RIGHT doing that.

Yep.. I’ve done just about all of them on a smoker like that.
Also I have used apple wood chips for smoking too…gives it an even better hint of smoke !

Looks great !
Should put a metal pan with water in it above the fire about 6-10” . Keep it about half to 3/4 full with water while cooking.

Use half ACV and half apple juice for your steam bath!
