If you want a longer smoke time?…. I soak my hickory chunks in water overnight. Gives it some steam action too.

Should put a metal pan with water in it above the fire about 6-10” . Keep it about half to 3/4 full with water while cooking.

The water steams some when the juices from the meat drip into it from it being hot. The steam and juices moisten the meat. Makes it sooooo much better ! Lol

I’ve done turkey like that, should have already tried pork. A half loin should be RIGHT doing that.
