You using wood chips in the tube? Or an actual cold smoker? Or pellets?
Let us know how it turns out. Im gonna start low scale cold smoking with the tube thing. Really wished I started months ago when it was cold and perfect for it.
Also I would agree with pecan. Or fruit tree. Still get a good smoke flavor. Could even do small amounts of hickory mixed in.
Peach wood or apple would be good. Very mild smoke.

Regular old chip smoker.
That was my original thought something mildly fruity and subtle.
I’ve found cherry works very well with beef.
I use cherry/pecan in my smokey mountain with pork. Very nice!
What cut of beef are you using?
