Peach, I went with peach, something light and fruity. It came out good, smokey but not overwhelming. I also cooked some cajun in the dryer just in case.
Apple or Pecan
only let the smoke go for about 30 minute, and you will not be overwhelmed
I'm going to try the pecan next batch I make.
can't go wrong with Cherry or pecan
I would make sure the bark is off the wood.
I can't tell a difference between Apple or Pecan
there is a big difference between Apple or Pecan vs Oak or Hickory
I tend to think of apple as a pork wood.
I've used both apple and peach for burgers and preferred the peach but love the apple on pork chops.
