I've killed a bunch of deer with a .303 Enfield. My father used to shoot coati (coatimundi) with a No. 5. Enfield "Jungle" Carbine at 2-300 yards. As a kid I thought it was neat, as an adult I'm in awe. Iron sights (the micrometer / adjustable sights), Milsurp rifle, 300 yards and a target the size of a raccoon.

I'm liking the Swiss K31s...

Would it be the better one to get over a Mosin Nagant carbine model?

No comparison. Go Swiss.
