I have towers for my chicken and Turkey, but I like to cook them this way sometimes..Reason being, I can thoroughly season inside, cut out the backbone and cook with the rib side down. It gives me a better taste with the bone exposed..I’ve done beer can chicken A bunch but never spatchcocked. How does it compare?

Congrats and happy birthday to him!,,I put the temp probe in the thigh it is the slowest to get to temp.I've never done it either. I've heard you get a better more even temp all the way through which makes it juicier. They also cook faster.
I'm doing wings again tonight. Its my son's actual bday and he said he wanted them again. Just family this go around though
