That's essentially the way my food processor cuts the cabbage and carrots with the shredder (grater) disk. Matter of fact, I have a recipe for KFC coleslaw that tastes almost identical to the real deal.Yall are gonna laugh but KFC has decent cole slaw. Somehow the bits of cabbage are square. Darndest thing.

This is the recipe I have used for years...
8 cups finely diced cabbage (about 1 head)
1/4 cup finely diced carrot
2 Tablespoons minced onions
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 Tablespoons white vinegar
2 1/2 Tablespoons lemon juice
1 Jalapeno minced (optional)
1.Finely dice the cabbage and the carrots.
2.Pour the cabbage and the carrot mixture into a large bowl and stir in the minced onions and jalapeno.
3.In the food processor, using a regular blade, process the remaining ingredients together until smooth.
4.Pour over the cabbage and carrot mixture and mix thoroughly.
5.Cover the bowl and refrigerate for several hours or overnight before serving.
I just realized your coleslaw recipe is identical to my KFC recipe, other than the jalapenos...
