Here was the duck just pulled out of the oven around 6:00 last night. Turned out perfect! Crispy skin, delicious meat and about half a jar of fat. I highly recommend trying one sometime...

My soninlaw is a big fan of frying in duck fat .

We took the fat from our last duck cooked and made caramels. Gave the out to family and friends at Christmas.
