Christmas Duck!

Duck goes in the fridge for 3 days to dry out the skin, then roasted on Christmas day. Haven't done a duck in a couple years, can't wait! Zora wants her neck NOW!

They are very easy to do, easier than a turkey. The crispy skin is about the best thing I've ever tasted. And the fat that comes off of them is gold. We collect it in a mason jar and use it for everything from fries to soups. I'll post the finished duck...
