They are very easy to do, easier than a turkey. The crispy skin is about the best thing I've ever tasted. And the fat that comes off of them is gold. We collect it in a mason jar and use it for everything from fries to soups. I'll post the finished duck...Always wanted to do one...please post more photo's when complete
