Trying a new way for the butt today. Trimmed all fat, open it up between bone and meat section and trim all fat (screwed this up a little), injected, rubbed with lanes signature then lanes ancho espresso rubs. One RecTec at 250. Wrap once bark is set. Supposedly super tender and you get much more bark.

Yep, guessing 6-7hrs. I got this 7.5lb butt for $5 at Kroger, they mislabeled the weight! So if I screw it up no big deal.

I have trimmed off the fat cap before. Didn't seem to hurt it at all.

Injection was 1/3 Carolina bbq sauce and 2/3 apple juice.

Yes, along with the remaining injection, about a 1/3.
