Similar to how I do mine. Throw it in at like 11 or so at 185 and let it go til I get up the next morning, maybe 7-8. At that time I wrap in butcher paper and let it ride til jiggly. rest in a cooler for 2 hours and cut into it.185 for the first 6 hours, then I bumped it up to 225 for the last 6.
