    Tablespoon of lemon juice, 2 tablespoons of honey, 3 tablespoons of bourbon. Heated to mix, then a tablespoon every few minutes. Granny added molasses to hers. Kids dose only had 2 tablespoons of bourbon. Still using it today, made some for the wife twice this week.

    Commercially as Clocker said, or use blast chiller/freezer. At home on the counter till it cools, then in the fridge. Especially if it will be consumed next day or two you are fine. Cook- chill- refrigerate = up to 6 days of safe storage. Cook- blast freeze- freezer= up to 6 months or longer...

    Had an old field hand worked for the family down the road that loved possum. Boiled, then pan fried. Stench would lay you out. I was about 10 or 12 at the time. He was always scouting out the Persimmon trees as his "catch" areas.
