Jakkar method or whatever you like to call it. It really helps certain cuts
 
Just Sous Vide the steak at 132 degrees for 4 hours, sear it with a blow torch (link below) and be done with it. Perfectly tender steak every time.


Lower temp for longer time kills everything.

I sous vide turkey for 24 hours now and wind up consistently with the best turkey we've ever.
