Who has the BEST pancakes ?

How different can they be? Flour, milk, egg, shortening ? Maybe walnuts or pecans. Beat up the egg whites and slowly fold in for fluffy pancakes. (I really didn't know all this, my wife told me.) Some use corn meal, sour cream, buttermilk.
How does your wife make them?
 
The short stack at Old Hickory House (yeah they are still at Northlake and one in Dunwoody) is about the size of a birthday cake and the full order looks like a wedding cake. I have never finished a short stack. They are indeed good.

No matter how you make the batter, you must use real maple syrup on the finished goods instead of that karo-highfructosecornsyrup-imitation junk.
