Did you hit them with the reverse sear? That is frankly the only way i cook thick cuts like that.

I usually marinate overnight and then smoke on low for an hour or so, Then throw on my black stone for the sear.

Sometimes I just season with chicken bullion and pepper and then just grill on high. I love my steak rare so thick cuts work better for the way I eat them.
