smoked backstrap with onion and peppers

backstrap trimmed of fat and silver skin
red,yellow,and orange peppers
red and sweet onion
chop onion and peppers into strips, sprinkle with lawry's season salt
sprinkle backstrap with lawry's and bury in the peppers in onions in a foil lined pan. add a couple of sticks of butter and tent.
put in smoker on 225 with hickory chips and smoke to 160 to 175 for a nice med well...

yea you got to do deer med well. i personally like well, well... burned.... but med on the smoker is still light pink'ish.
Why do you have to do it med well? I cook mine med or med rare and it taste just fine to me. Is it personal preference or is there something I don’t know about lol? I’m not trying to be snarky it’s a genuine question.

Also that looks delicious and I may have to give it a try!

i have heard that you should cook it "well'ish" , due to bacteria. but i love well done meat.
 
Dinner last night. We didn't get a chance to eat it Monday night my wife wasn't feeling good. Tuesday we had a watch party. So last night a little mashed potatoes some garlic bread and yummy yummy yummy
