Slow smoking some butt this morning

Pics or it didn't happen.
Oh....it happend. Done smokin...into the fridge until dinner time. Slice it up and sear each slice in a hot iron skillet...

You don't slice it when done? I've only done a couple of briskets and have just served when done or after sitting in the cooler an hour or two.
Nah I chill it so it's firm...then slice and sear each piece. You get a little crust on either side of each slice and it still has the 'pull apart' texture. So good.

Pork butt like this too...
