I do the same every year.
Prepare the roast with light coat of Olive oil and season to my liking.
Pre heat oven to 375.
I put it on a rack in a shallow pan.
Pop it in the oven and cook for 1 hour and turn oven off.
DO NOT OPEN THE OVEN! I repeat, DO NOT OPEN THE OVEN!
1 hour before serving turn the oven on to 300 and cook for 45 minutes.
Take it out and let it rest for at least 15-30 minutes, this keeps it very juicy.
Slice and serve. Boom!!
