On the menu last night: homemade chicken parmesan w/ rosatella sauce 
It was a hit, clean plates all around (3 growing boys) and my wife’s favorite dish
I cut the chicken down a little smaller and used olive oil and Italian bread crumbs and got them in an air fryer. Helps with a nice quick fry so they don’t get dried out and they are super crunchy.
Key to keeping it crunchy is not to use too much sauce.
Heat that oven up to hella hot 450 and put a little sauce on top (not under and over) w/ some parm and mozzarella… then when it’s melted, put it on broil and hit it with that provolone until it starts browning, then snatch it out… it turns out awesome
