It’s really thin sliced brisket, usually 1mm and it’s the middle portion of the brisket slab. They usually freeze it for like 30-1 hr or so it’s a bit harder and use a deli slicer, it’s doable with a knife too since it’s frozen. Usually eaten with fried kimchi and rice paper, dipped in sesame oil and salt. You can cook on a pan, tastes better slightly crispy.

It’s popular at Korean bbq places or at the Mongolian bbq places you see at the mall.

I’ve never tried smoked brisket unfortunately, sucks being Asian 😂 I didn’t grow up eating that delicious smoked bbq. Gramps had a smoker, but would do salmon or tuna.

This woman does a tutorial on how to cut it from the slab, but tbh unless you’re making other Asian dishes with it, it’s kind of a waste since that smokehouse bbq looks crazy good. Don’t even get me started on the Korean style pork belly. The brisket is good for making pho broth too if you’re a fan of that haha.
