It’s really thin sliced brisket, usually 1mm and it’s the middle portion of the brisket slab. They usually freeze it for like 30-1 hr or so it’s a bit harder and use a deli slicer, it’s doable with a knife too since it’s frozen. Usually eaten with fried kimchi and rice paper, dipped in sesame oil and salt. You can cook on a pan, tastes better slightly crispy.Flappy bird brothers tell me more about Korean cuts and chaldol.....
