I cheat and have used the mesquite from academy however i add black pepper and Worcestershire sauce. It’s not to spicy but good. Will be trying out some other recipes
 
Is this basically, grind, season, mix, mold, smoke?

I’ve only ever done jerky with thin cut strips, never ground.
Yes I use a gun ( like a caulking gun) that’s made for this and make the strips and put in smoker for 3-4 hrs on about 175 and works good and is easy to eat
