15 is fine for the default. If folks want more than that they can change it.

That changes for each user. If you leave the site and come back in a couple hours you should be back up to a few pages

But why would I want to Leave? Is there a way to make it show Posts for say the last hour?

I don't know of anyway to adjust that, it usually just bases it off the last time you were online, but you may be able to a manual search for posts in the last X amount of time, not sure on that though.
