Each to his own. That is why we have horse races. To me, chili is ground beef, many red kidney beans, much powdered cayenne pepper and moderate table salt, all mixed in tomato juice or V-8 spicy juice. As for as BBQ, to me the only meat is chopped pork. Over and out.
 
I start with whole dried chilis, hydrate devein and purée into and actual chili base. No powder for me. Ground and regular sausage, steak, and roast. I hand chop fresh tomato’s, peppers and onions. Usually ad a can of tomato sauce, and a can of tomato paste. Beans are from dried not canned, overnight to hydrate. Red and black beans. Ad whatever suits my fancy. Simmer for about 3-5 hours.
