I just submitted my resume and cover letter to Glock for a position they have open. Anyone here work at Glock and have any insight on the hiring process (or input in selection for that matter)?

You probably should have left out the part about preferring superior American engineering.
Getting any information from any employee at Glock is extremely difficult. I have been in their smyrna facility on business many many times and every employee seems to know just enough to do their job. Not taking anything away from how good or bad they are they are all extremely friendly and know their job very well. Good luck with your application, I know some positions are pretty hard to get.
I worked at glock as an armored back in 2007, it was a fun job and a cool job. After the coolness at the fun wore off it hits you like a rock , I only make 13 an hour to repair glock and shoot a rack of a hundred new guns, and not the fun way but in a drawer slide. Great place and great people but the money sucks, I think the benefits were good though.
