also what are you using for grinding? I have a kitchenaid but no attachments for it yet. I am carnivore as of a month ago (and down 25 pounds!) so going to keep eating a metric S-ton of beef.
This Christmas I cleaned out a butcher selling ground rib eye and tenderloin scraps as burger. Can confirm, amazing.

We got 3, so something like 15 pounds. Would have bought the store out but we have a 1/2 cow on the way down from PA later this month, so saving room.
Plan to Sous Vide one on christmas... One more was cut into 3" steaks for us to eat before then.
