  1. Gas grill catching fire do I replace or go charcoal

    Since we’re on the topic…….
  2. Gas grill catching fire do I replace or go charcoal

Oh, ok. That makes sense then. To me the two most important decisions in BBQ, grilling and smoking is choice of equipment and fuel. There are tons of cheaply made grills out there, and tons of crappy fuels. When I used charcoal, the first thing I learned was to never use lighter fluid (I...
  3. How do you fry your cornbread?

I had never heard of Blue Plate Mayo until I moved back to GA in 2014. Now it’s all I ever buy.
  4. Gas grill catching fire do I replace or go charcoal

What is it you’re not convinced about? My pellet smoker does everything a gas grill does and more. I have a Recteq RT700. Really great quality, probably best on the market.
  5. Gas grill catching fire do I replace or go charcoal

If you’re considering getting a new grill, research pellet grills/smokers. I switched from charcoal about 5 or 6 years ago and love it. Lots of smoke flavor, set it forget it with an accurate thermometer. You can smoke anything , Brisket, Chicken, Turkey, Butts, Wings, etc. Works great.
  6. About to throw on these American Wagyu flank steak pinwheels….

    Turned out pretty damn good.
  7. About to throw on these American Wagyu flank steak pinwheels….

That I picked up at Oink & Moo in Ellijay today. Never cooked pinwheels before, guess there’s a first time for everything.
  8. Cooking my first pellet smoker brisket…

Thanks. Everyone raved about how great it was. Look at the smoke ring and the juice on the cutting board.
  9. Cooking my first pellet smoker brisket…

12 hours 203°. Can’t wait to taste it.
  10. Cooking my first pellet smoker brisket…

Yeah, I've always cooked my briskets fat side down. Hopefully, I'll have a good amount of fat in the catch pan to help out.
  11. Cooking my first pellet smoker brisket…

    Good video.
  12. Cooking my first pellet smoker brisket…

So far, my favorites on a pellet smoker are wings and butts. Steaks are good, but I cant get a great char on them without direct exposure to the flame. Hopefully, this brisket becomes another favorite.
  13. Cooking my first pellet smoker brisket…

Yes, it's a whole packer brisket, 15 lbs. I have a catch pan under the racks to catch the drippings. I'm planning to wrap it at the 6 hour mark (learned that from Aaron Franklin). With all the Christmas shopping, I forgot to buy butcher paper, so it'll have to be wrapped in foil. If it doesn't...
  14. Cooking my first pellet smoker brisket…

I’ve cooked numerous briskets, almost exclusively on off set wood smokers, and I have used a Kamado smoker (which wasn’t my favorite) but tonight I put this brisket on my Recteq pellet smoker. I’m really hoping it comes out better than the Kamado smoker did. It wasn’t terribly dry, but could...
  15. Moose Steak thanks to @D_Max

Looks really good @DinkyDau. Reminds me of living in Maine a few years ago. My wife’s cousin shot a moose one year we lived there, then her husband shot one the next year. They gave us more than 30lbs of steaks and burgers. They added 80/20 beef to the burgers because moose is so lean. They were...
  16. Whatever happened to the old school ribeye....

When I got a 7 lb standing rib roast at Publix the other day, I had the butcher cut it into 2 inch steaks. He cut the spinalis off and I took it home vacuum sealed it to eat later.
  17. Although 55° outside is not nearly as cold as it has been, still a good day for chili and cornbread.

Haha. This was an evening Christmas program and they had one on Saturday that was packed, so I was able to sneak in the back. There was a lady sitting there when I started to sit down. I think she heard my stomach grumbling and was like “Oh, hell naw.” Got up and moved to another row.
  18. Although 55° outside is not nearly as cold as it has been, still a good day for chili and cornbread.

So, a little update to my chili from yesterday. Last night the stomach rumbling started. Didn't think much of it, knew it would happen eventually, just like it always does especially after 2 big bowls. Except this time, it came in waves. I mean every 20 mins or so. Can't remember the last time...
  19. Although 55° outside is not nearly as cold as it has been, still a good day for chili and cornbread.

Exactly. I’ll start a new argument. Sour cream in chili. Yea or nay?
  20. Although 55° outside is not nearly as cold as it has been, still a good day for chili and cornbread.

No, those are diced tomatoes. For beans I only used frijoles negros.
