Question for all you meat smokers (not that meat hehe)

Just gotta figure that out for yourself. Just keep the temp at 225.

To add to this..you can smoke for a couple hours and if you can't watch it... then go put it in the oven@225 and it will be good....

sometimes I will put them in the oven and go to bed when I wake up its like Santa came by....
 
It came out ok. I may have cooked it a little to long. I need to get a good thermometer. Can anyone recommend one ? I'm looking at the maverick et733

I've been using an inexpensive Taylor remote cooking thermometer I bought off Amazon for $15. Works great and has been accurate.
