Tonight I broke out The Big Easy and cooked a perfect pork roast. Side dishes consisted of baked sweet potatoes with sliced apples marinated in spices, orange juice, and brown sugar. The other side was sautéed red and orange peppers with red onion, seasoned with salt, pepper, sugar, red wine vinegar and basil. Need to start using my Big Easy more often. If anyone has recipe ideas that they use on their Big Easy, please share. Thanks
