I fried up some of of my leftover chanterelles from yesterday. Chopped and lightly sautéed all the ones I'm going to freeze but I had a hankering for some fried mushrooms for lunch.
I took some of the sautéed ones and tossed them in a seasoned 3:1 cornmeal to all purpose flour mix. Fried them in the iron skillet and oh my word were they good! Also have some very concentrated broth for future gravy and soups.
