Comes with 5 trays, can add another 7, for 12 total.
Have been using it for 4 years to dry strawberries, figs, bananas, apples, peaches, herbs and make fruit leather.
Works good, takes time, but they all do. Never had to rotate the trays, when I used 5 trays. Have not tried making jerky. I am very happy with it.
Winter project is building a solar dehydrator for fruit, berries and grapes.

Just slice off what you need. No reason to kill a whole cow for just one load of jerky.
