What are your favorite items to can?

Favorite things to can. Green Beans, Tomatoes, Chili, Vegetable Soup, Greens, Peppers, Chow Chow. For the Soup and Chili, we go to the Cannery to cook and can.

Every year I can green beans, squash, tomatoes from my garden. I make and can my own beef stew, white bean chicken chili, beef/vegetable soup etc. I learned to can from my Mom and Dad as a kid and it is something I really enjoy today.

Nothing like going to the pantry in the winter and grabbing a jar of food you grew and canned in the summer.

Done lotsa vegetables and a few jams. Lotsa times make huge amounts of salsa.

In to hear about chow chow.

Once again, I am a rookie with this stuff.... is this all fermentation style or do you can and seal right away?

Havent done chow chow yet myself but I know it sits out a while to ferment and is then canned.

As far as the Chow Chow goes, all recipes are different and it is kind of a "Use what you have on hand".
